if you use the historgam in the evf or the screen, which ever you use to shoot with all you need to do is stop the shaded area on the histogram from touching the right hand side of the grid, if the shaded area touches it the camera is recording pure white highlights which cant be adjusted in edit
on the M50 i found the full auto modes to ramp up the iso to crazy highs in the first instance, the P mode was the first 'auto' mode that gave some amount of control without getting too much into full manual with the full auto modes they completely ignored the iso cap you can put on the iso from the menu, P mode was restricted with this which is probably were your images are taking a hit Kevin, full auto modes will run the iso up even in bright daylight where they not needed. give P mode a try with a iso cap of 3200 or 1600,
I am just trying to get my head around the settings that you are using that cause some of your images to have the highlights blown out. I am assuming that you are using your RP. The command dial you have set to "P"? What do you have the ISO set to? If we are able to get the exposure correct, you will have more detail in the brighter white parts of this sort of image.
