    Using a Canon R7 - To get a full subject in perfect focus, especially in fast moving subjects.
    Is it recommended to disable eye detection?

    I don't have an immediate source to cite here from the canon website or manual. But yes lets say you had someone riding a mountain bike, I would turn off eye, have subject tracking on and set subject to person. I imagine in that case you want it trying to capture the moving person not their eye specifically. Don't have an R camera, but those are the settings I imagine would work best in that situation. You also want to set yourself up with success where your stopped down a bit and don't have a a extremely shallow DOF.
